Fact: not all “Kombucha” is the same. If you’re looking for real, 100% whole/holistic kombucha with no added ingredients such as synthesised sweetners and fruit sugars and none of the vital microbes removed, you’ll be hard-pushed to find one being sold commercially today.

Mass-production requires cutting corners and processing for on-the-shelf stability, and many commercial brands today are packed in plastic, porous, polymer-lined aluminium cans which impair the taste and may leech traces of the 200 chemicals that comprise the can.

Studies have found that the porous lining can also leech trace amounts from the aluminium can itself, which is cited as the leading cause for the explosion in Alzheimer’s disease in recent decades.

Much of the “kombucha” today that is sold in supermarkets and on Amazon are lab-engineered variants, a mixture of powdered probiotics powders, or from the same commercial “instant mix” supplier that removes the vital component of fermented products; the fermentation process itself. Ugh!
