CHINA WHITE PEACH BELLINI WITH FRESH MINT

THIS decadent yet simple mocktail combines the delicate juicy sweetness of peach purée with prosecco-like GO Kombucha China White’s fragrant and tangy light fruit notes to make the perfect non-alcoholic Bellini.

With perfectly balanced sweet and sharp flavours and plenty of indulgent fizz, this is the ultimate kombucha mocktail. Peaches are high in antioxidants, magnesium, phosphorus, iron, and B vitamins. Their antioxidant effect (antioxidants are beneficial plant compounds that combat oxidative damage and help protect your body against ageing and disease) has been shown in one study be effective in just half an hour (source: healthline).

They may also aid digestion due to a combination of soluble and insoluble fibre, which can improve our gut health. Combine this with raw kombucha’s natural good bacteria and you have a delicious drink you will not feel at all guilty treating yourself to.

We hope our recipe makes up for our decision not to add a GO Kombucha “China White Bellini” to the range, as was originally planned for mid-June. Sadly our test trials with white peach pulp, concentrate and distilled essence of the whole fruit yielded variable in-the-bottle results; either too sweet, too overwhelming, too volatile. We would never put out a new flavour we weren’t 100% proud of. But we think this mocktail is the perfect way to get your peach and China White fix!

Ingredients (makes 3-4 glasses, multiply ingredients to make more)

  • 150ml Quality peach purée. White flesh peaches are slightly sweeter, while orange flesh peaches have a more tart flavour - both work really well so it’s up to your personal preference. You can buy good quality ready made peach purée (with no additives, e.g. Funkin White Peach Purée) or follow the instructions below to make your own.

  • 2 x 250ml China White (well chilled)

  • Fresh peach slices and mint sprigs to garnish

Method: Homemade peach purée

  • Bring water to a boil in a saucepan, add three peaches for 60 seconds

  • Remove the peaches and place them in a bowl of ice water to cool

  • Remove from the ice water and peel the skin off

  • Slice in half, twist and pull the peach halves apart, remove the pits

  • Place the peach halves into a blender and blitz until smooth

Method: China White Peach Bellini

  • Simply combine the peach purée and kombucha in a jug and serve well

  • Serve in chilled glasses and garnish with peach slices and a sprig of mint
